Hello everyone! Welcome to the last week of March. The sun is out, it rained this week, which was so fricking awesome - and the blue skies are bright.
Winter is almost over, and I just want to say that as much as we look forward to the spring / summer goodies, we will also miss the winter delights. It makes me sad that the ocean waves and the little bit of rain that we are getting have almost come and gone. And it makes me a little sad that this cauliflower harvest is the sign of the end of winter.
Cauliflower, to me, is the ultimate winter crop. Cauliflower loves the winter; it loves the cool weather, and it loves the rain, and it is extremely pleasing to eat fresh off the stalk. And like Cauliflower, I LOVE winter, and I love farming in the winter. I love the cool days and nights and I especially love the crops that love this weather. I love growing them, and I love eating them more. So, enjoy this last burst of sweet, crunchy, and lovely cauliflower because it is coming to an end. The cauliflower this week was grown with love by Jose Alcantar.
Nature is always providing what we need, when we need it. One serving of cauliflower provides nearly 80% of your recommended daily vitamin C. One head has about 11g of protein, and this delicious vegetable provides SO many other vitamins and minerals. Who would have thought cauliflower has so many health benefits that protect us from the flu season?
ENJOY your week, stay healthy, breathe in the fresh earth, and show love to your neighbors.
