Hi guys,
This is Corey, her cutie boyfriend Riley and her dog Noodle. Corey lives inside an old barn on an organic cherimoya ranch here in Carpinteria. A barn that that has a lot of memories for me as a child because it’s where my dad used to rent cooler space to run his farming business. And still today, there is one my dads old 1945 Kubota tractors sitting there, not functional but looking old and rad. I think it’s safe to say that if you were 23 years old you’d probably be jealous of her dreamy living set up too. I know I am! Corey has been a farm box member for at least two years now and recently she has joined our team. She helps us pack farm boxes & works at our produce stand on Fridays and is our accounts manager. We couldn’t love her more!
Last night I went over to their house for a BASIL PARTY! Corey had her own spin on basil and it’s super great. Instead of using parmesan in her pesto, she enjoys a nice dash of nutritional yeast. And, well, because the store was out of pine nuts she used cashews. When I got there, Corey chopped everything up and blended it. It took maybe 10 minutes! And it was fabulous! So give it a try because it’s so easy! Here is her recipe:
Corey’s Basil Recipe:
2 lemons
one clove garlic
1 cup basil
1 tablespoon nutritional yeast
1 cup cashews or pine nuts
1/3 cup olive oil
Put all ingredients together in a food processor and blend until smooth-ish.
Enjoy with your favorite noodles, or roasted veggies!
