Last week I got a call from Jose Alcantar saying he’s literally drowning in tomatillos. So what do you when life gives you too many tomatillos? You help a farmer out and try to talk everyone into making salsa verde! Here is an easy recipe for you to try. You probably have most of the ingredients available! You can do it guys! Spice up your life, and make a big vat of it. I promise you’ll use it all week long. My favorite things I put salsa verde on is eggs, veggie burritos and plain ol chicken. I hope you enjoy it!
Easy Salsa Verde
INGREDIENTS:
1 1/4 lb tomatillos
1 bunch cilantro
1 jalapeños or more if you like spicy
2 cloves garlic, minced
Juice of one lemon
1/2 yellow onion
Sea Salt
METHOD:
Preheat oven to 400. Place tomatillos in baking dish and bake for about 25 minutes until golden color.
Meanwhile, chop the cilantro, jalapeños, and onions.
When tomatillos are golden, let cool and then remove husks.
In a blender or food processor, puree all ingredients and add salt to taste.
